On your arrival at the farm, Tosca and Debora will welcome you and make you feel at home throughout your stay. Then, for a recommendation for the best wine to go with your food, you can ask Marco, the sommelier (member of AIS, the Italian association of sommeliers), together with Romildo and Mainardo, are ready to answer all your questions on organic wine production, zero-mile cooking and the eco-sustainable structure. In the kitchen, chef Francesco, Mary and Federico will put all their imagination and energy into preparing dishes for you that change with the seasons.

Francesco Locatelli, young and very talented chef, graduated in 2010 from the catering school in Nembro. During his studies, he was lucky enough to gain experience in some of the best restaurants in Lombardy, including the “Miramonti L’altro” in Concesio (Brescia) 2 stars Michelin. In January 2010, at only just 18, he was awarded the AIS professional sommelier diploma. In his fifth year, he did a placement at the refined restaurant in Almenno San Salvatore “Cantina Lemine”, where he stayed after finishing his studies as chef de partie. The summer before Polisena opened he worked at the renowned “Roof Garden” in Bergamo, which boasts a Michelin star. Experience in close contact with the famous chef Fabrizio Ferrari is of great importance for Francesco who since October 2011 has managed our kitchen, bringing a touch of freshness and creativity to dishes of the local tradition but also from elsewhere.
